Cucumber Avocado Tuna Boats Recipe

Looking for a grab-n-go lunch or appetizer that’s good for you? If you’re watching your weight and trying to eat healthy you’re going to love these Cucumber Avocado Tuna Boats that are really easy-to-make! During the summertime I like to whip up a batch of them once our cucumbers start coming in. The entire family loves them!

When I make them I cut my fresh cucumbers into rounds about a 1/2″ thick. After I prepare the filling I like to place them on a serving tray, cover the tray and refrigerate. The family can get into the refrigerator and snack on them anytime they want or eat them for a tasty lunch.

Cucumber Avocado Tuna Boats Recipe

1 Large or 2 Medium Cucumbers
1 Can Tuna in Water, Drained
1 Large Avocado, pitted, halved and mashed
2 Tbsp. Fresh Lemon Juice
3 Tbsp. Finely Minced Onion
4-5 Tbsp. Reduced-Fat Mayonnaise
Salt and Ground Black Pepper (to taste)
Ground Paprika

Wash cucumbers, slice off a little bit from each end. Cut cucumber in half to make it easier to work with. Use a vegetable peeler to remove some of the peel to make a nice stripping pattern. Slice into 1/2″ thick rounds. Use a teaspoon to scoop seeds out of the rounds being careful to not go all of the way through. You want the rounds to act like “mini bowls”. Lay rounds on a serving platter or plate; set aside.

In a medium sized mixing bowl combine together the drained tuna, mashed avocado, lemon juice, minced onion, mayonnaise, salt, and ground black pepper. Stir until all of the ingredients are combined together.

Use a teaspoon to spoon the filling onto each cucumber round. Sprinkle ground paprika on top. Refrigerate for 1 hour before serving.

Variations: You can toss a little bit of minced garlic, shredded carrots, finely chopped celery and/or finely chopped green bell pepper into the filling if desired. You may have to adjust the mayonnaise. If you like the taste of bacon…you can add bacon bits or finely crumbled bacon on top too!
