If I could capture fragrances with my camera, you would immediately understand why I love Wissotzky Tea Company’s new Signature Collection line of Artisan Spiced Teas—and they taste even better than they smell! Hot or iced, these chai teas deliver a refreshing yet full-bodied tea-drinking experience.

Basically, chai tea is black tea blended with spices, traditionally served with milk and sweetener. Wissotzky Tea Company’s four new chai blends all share that lovely chai spiciness, but each has its own distinct flavor characteristics.

Here’s how Wissotzky Tea describes them:

· Salted Caramel Chai: a sweet and savory beverage redolent of warm cinnamon, ginger root, cloves, sea salt, and cardamom.

· Ginger and Turmeric Spiced Chai: the earthy flavor of turmeric (known for its health benefits) blended with ginger root, cinnamon, cloves, and cardamom.

· Spiced Nana Mint Chai: robust, flat-leaf Mediterranean mint complemented by cinnamon, ginger root, cloves, cardamom, and pepper.

· Pumpkin Spiced Chai: a toasty balance of cinnamon and ginger with pumpkin pieces, cloves, cardamom, black pepper, and chili.

If you twisted my arm and forced me to choose a favorite, I’d have to go with the Salted Caramel Chai, but I’ve been happily drinking all four varieties. The Spiced Nana Mint Chai, in particular, is very nice served cold. Although I do love a hot cup of tea, the warmer weather has me craving iced tea. Luckily, Wissotzky Tea Company provides easy instructions for making iced tea, whichever method you prefer:

· Hot-Brewed: Bring 8 cups water to a simmer; remove from the heat and add 6 tea bags. Let steep about 4 minutes, until it’s the strength you like. Remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.

· Cold-Brewed: Combine 8 cups cold water and 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it’s the strength you like. Remove the tea bags. Serve in a tall glass with a lemon wedge or a few berries for an extra kick of flavor.

I made a smaller batch of cold-brewed Spiced Nana Mint Chai, using a ratio of just under two cups of water to two tea bags. Perfect! Honestly, few things are more refreshing than a glass of iced mint tea, and this spicy-minty chai blend made for an ideal cold drink on a hot afternoon.
