Although I will never travel the world, I can bring global flavors into my kitchen, and Pereg Natural Foods makes it simple with their wide selection of spice blends. Allow me to tell you about two of their all-natural mixed spices, Koobah and Garam Masala.

But first, a confession: Since the day my new Pereg spice mixes arrived, I keep opening the jars to take in their fabulous aromas. True! The best way I can tell you about them is to quote Pereg’s own description:
• Koobah: Baharat is simply the Arabic word for “spice,” but cooks in every Middle Eastern household know it as a basic seasoning blend. This aromatic mixture – different regions favor different blends – is used in a variety of traditional meat, chicken, fish, and rice dishes. It makes an excellent dry rub for grilled or roast lamb, salmon, and chicken. It’s also delicious when sprinkled into burgers, mixed with hummus, or tossed onto vegetables (particularly corn on the cob and eggplant) before roasting. Koobah is Pereg’s earthy variation on the ubiquitous kitchen staple. It starts with baharat and adds warm layers of cinnamon, allspice, rose, nutmeg, and coriander for a complex finish.
• Garam Masala: Like its Arabic cousin, garam masala is a blend that varies by region. It’s what gives Indian cuisine its characteristic flavor – think curries, paneers, chana masala, and tikka masala. Garam masala marries beautifully with meat- and legume-based dishes and stands on its own when sprinkled over roasted veggies (particularly cauliflower and winter squash). Pereg’s Garam Masala strikes a fragrant balance of cardamom, cloves, cumin, fenugreek, coriander, and a pinch of brown sugar. Use it as a dry rub, add it to ground beef for an elevated hamburger, or on ribs and steak for unexpected delicious flavor.
Although these blends are ideal for grilling, my grill isn’t up and running yet, so I’m using my air fryer as an alternative. Air-fried chicken thighs rubbed with Koobah come out great—juicy, flavorful, and delicious. The taste is hard to describe; it’s warm and spicy, slightly floral, and definitely something I’ll be making again and again.
Garam Masala also works well with air-fried chicken, but it really shines in rice. I stirred some into basmati rice before cooking, then, since Garam Masala is often used as a finishing spice, I sprinkled a bit more over the cooked rice for another layer of flavor. So good—and the fragrance is amazing! I might try the Garam Masala in baked goods for an exotic twist on traditional baking spices.
