Spicy Ditalini and Chickpea Stew Recipe

I enjoy eating a wide variety of  homemade soups and stews. Typically when I make them I will make a double batch and freeze one batch for another time. Soups and stews are classic comfort foods that can be enjoyed year-round.

Today’s guest post recipe is courtesy of Pasta Fits. This recipe is less than 300 calories per serving, great for those who are watching their weight. Here’s a fun serving tip: Serve with a dollop of low-fat yogurt for added richness and flavor.

Spicy Ditalini and Chickpea Stew Recipe

Spicy Ditalini and Chickpea Stew Recipe

2 tbsp. canola oil
1 onion chopped
1 carrot chopped (about 3 oz.)
1 stalk celery chopped (about 1 oz.)
3 cloves garlic minced
1 tbsp. fresh gingerroot minced
1 tsp. each ground cumin coriander and paprika
1/2 tsp. salt
1/4 tsp. each dried oregano chili flakes and pepper
Pinch cayenne pepper
1/4 cup tomato paste
3 cups sodium-reduced vegetable broth
1 can 19 oz. no-sodium chickpeas drained and rinsed
4 oz. ditalini
6 cups spinach
2 tbsp. finely chopped fresh cilantro

Heat oil in large saucepan set over medium heat; cook onion, carrot, celery, garlic and ginger for about 5 minutes or until vegetables start to soften. Add cumin, coriander, paprika, salt, oregano, chili flakes, pepper and cayenne; cook, stirring, for about 2 minutes or until spices are fragrant. Stir in tomato paste; cook for 1 minute.

Stir in broth, 2 cups water and chickpeas; bring to boil. Reduce heat to medium; simmer for about 10 minutes or until vegetables are tender and broth is flavorful.

Stir in ditalini. Cook, stirring occasionally, for about 10 minutes or until pasta is tender and broth thickens. Stir in spinach and cilantro; cook for about 1 minute or until spinach is wilted.

A whole host of things could go wrong and they usually do when you’re not prepared for them.

6 Tips on How to Raise Emergency Cash FAST

Looking to raise some emergency cash quick? Here’s a few tips that can help!

1. Look around your house to see what you can sell. If you need the money fast, select one high-value item and sell it. You can list it online or pass the word around to family, friends & co-workers that you have XYZ for sale. You can also try placing an ad in your local newspaper or list the item for sale on the internet.

2. Sell your services! If you need money, offer to babysit for a friend or family member, offer to clean someone’s home, to wash their car, walk their dog, do handyman chores around the house, yard work, etc. These are all great ways to come up with extra cash. Look at it as bartering for your services.

3. If you’re employed, talk to your boss to see if you can get a payday advance. If you work for a small company or a mom & pop type of shop, they’re more apt to work with you on a payday advance. This is NOT a loan, it’s basically getting your paycheck released a little early.

4. If you need money for a “true” medical, dental, food or housing emergency, talk to your pastor at church. A lot of churches will help their parishioners in a time of genuine, emergency need.

5. Here’s an option if you’re comfortable in asking friends, family members or co-workers for a temporary loan. If you plan on doing this…we recommend that you offer them a piece of collateral (an item) to hold onto until you fully repay the debt.

6. While we don’t really recommend this last option, we are listing it and it should be used as a last resort. If worse comes to worse…you can try to apply for a quick bank loan from your financial institution or take a cash-advance loan on a major credit card. This should be your last option to consider.
