How many of you enjoy Mexican cuisine? I grew up eating a lot of Mexican food and absolutely love it. My husband Sam grew up eating a lot of Italian food, since his mother immigrated to the U.S. from Italy. As you can imagine, we eat a lot of both here in our home!
Two weeks ago hubby whipped up a big dish of Nachos Supreme for us to enjoy. This is really easy to throw together and you can basically add-in other goodies that you enjoy or take-out the ones that you don’t.
Sam’s Nachos Supreme Recipe
1 1/2 lbs. lean ground beef
1 packet Taco Seasoning Mix
1 large green bell pepper
1 large red bell pepper
1 small to medium onion
2-3 medium tomatoes
1/4 cup black olives, sliced
1 can Refried Beans
1 small bottle Taco Sauce
1 jar Salsa Con Queso
1 container sour cream
1 bag Tortilla Chips
In a large skillet over medium heat brown the lean ground beef. Drain grease. Stir in the packet of taco seasoning mix. Simmer for an additional 4-5 minutes or until the ground beef is cooked through and hot. Remove from heat, set aside.
Chop up the green bell pepper, red bell pepper and tomatoes. Dice the onion and slice the black olives.
Heat up the refried beans on the stove-top or in the microwave oven until very hot and heated through. Spoon the Salsa Con Queso into a microwave-safe dish and heat until melted and hot.
In a large bowl or baking dish…layer all of the ingredients including the tortilla chips. You can layer them in any order that you wish. When it comes to the taco sauce and the sour cream…we just put as much as we like in between some of the layers according to our own taste buds. If you like a lot of “heat” you’ll want to use a lot of the taco sauce. We love sour cream so we tend to really mound that in between a few of the layers. Hubby likes a lot of Salsa Con Queso so he’ll add more onto the top of his nachos during serving time. I like less. Once done, serve immediately with additional tortilla chips on the side.

This is an easy recipe and I am sure my family would love it. I would probably take the time to peel the peppers fist.
I added this to my favorites recipe list. It looks so delicious and would be great for any of our family dinners. I have never thought of adding the refried beans but what a good idea.
I wish I had these in front of me right now I could so some serious damage on these they look so good. I have to try this recipe it sounds so full of good stuff. I haven’t made nachos in so long and my little recipe is wimpy so I am so going to try yours thanks for sharing.

This looks good. Hubby is no a fan of peppers so I usually add roasted peppers to mine. We like having a Mexican night now and then and I make this!
