Get the Best Vanilla Flavor with Nielsen-Massey Tahitian Pure Vanilla Bean Paste
It has always been a mystery to me that the word “vanilla” can be used to mean “ordinary,” because good vanilla is one of the most divine flavors known to humanity. Seriously, let’s start using the word “vanilla” to mean “awesome!”

If you’re a loyal reader of The Classy Chics blog, you know that we love Nielsen-Massey and have featured many of their products, with vanilla extract at the top of our favorites list. Today I’d like to introduce you to a different type of vanilla from Nielsen Massey, Tahitian Pure Vanilla Bean Paste. This paste is bursting with vanilla flavor! It’s thicker than vanilla extract so it’s perfect for applications where you don’t want extra liquid that might thin out your batter or sauce, and it’s made with a touch of sugar so it doesn’t have that bitter edge. Plus, it’s full of bean specks from the vanilla pod, which adds a great look as well as great flavor to your homemade goodies. Nielsen-Massey says the flavor profile of Tahitian vanilla is floral and fruity, “often described as cherry-like.” I describe it as a little bit of heaven!
This delicious all-natural Tahitian Pure Vanilla Bean Paste is kosher certified, gluten and allergen free, and Non-GMO Project Verified. You can use it in the same amount you’d use vanilla extract or powder, which makes it easy to substitute into your recipes.
Here’s a recipe for vanilla fudge that lets the amazing flavor of the Tahitian Pure Vanilla Bean Paste shine, and it looks gorgeous with all those vanilla bean flecks. (Confession: I licked the Vanilla Bean Paste measuring spoon.)
Vanilla Fudge Recipe
2 cups sugar
1 (12 ounce) can evaporated milk
4 tablespoons unsalted butter
Pinch of salt
2 teaspoons Nielsen-Massey Tahitian Pure Vanilla Bean Paste
In a heavy 4-quart saucepan over medium heat, combine the sugar, evaporated milk, butter, and salt, stirring until the mixture is smooth. Bring it to a boil, then, stirring almost constantly, boil the mixture until it reaches 235°F-240°F on a candy thermometer (the soft ball stage), about 30-35 minutes. Remove the pan from the heat and beat the fudge with a wooden spoon for several minutes, until it’s thick and less shiny. Stir in the Tahitian Pure Vanilla Bean Paste. Spread the mixture in a greased 9-inch square pan. Score it into squares while it’s still warm; let it cool until it’s set, 2-3 hours. Cut the fudge into squares.
