Broiled Black Bean Jalapeno Poppers Recipe
Hosting a party at your home this weekend for the big game? That’s right, the Superbowl is less than one week away. If you’re scrambling around this week looking for an easy-to-make recipe to serve to your party guests, we’ve got one for you today that’s courtesy of Julie Hartigan at Cooking with Julie. Make my healthier version of the happy hour favorite for the spice lovers in your life! Halved jalapen?os are broiled and stuffed with a savory black bean and cheese mixture, then topped with a cooling lime-crema. These flavor packed bites are so delicious they won’t miss the heavier deep fried version one bit!
Broiled Black Bean Jalapeno Poppers Recipe
6 large jalapenos, halved lengthwise and seeded olive oil cooking spray
2 Tbsp. minced shallot
3/4 cup canned black beans, rinsed and drained 1?2 tsp cumin
1/4 tsp. chili powder, additional for garnish
1/4 tsp. kosher salt
1 Tbsp. minced cilantro
2 Tbsp. chopped scallions for garnish
Lime Crema
3 Tbsp. fat free Greek yogurt 1/8 tsp lime zest
1/2 tsp. lime juice pinch salt
Line a broiler pan with foil and coat with cooking spray. Lightly spray jalapenos with cooking spray and season with a pinch of salt and pepper. Place cut side up on pan and broil for 3 minutes 2” inches from heat or until lightly charred. Coat a small nonstick saute? pan with cooking spray and cook shallot for 2 minutes add beans and 3 Tbsp water to pan and mash lightly with a fork. Stir in cumin, chili powder, and salt. Reduce to low, cover, and simmer for 2-3 minutes to heat though (add more water if necessary). Stir in cilantro and keep warm. Combine all Lime Crema ingredients and keep chilled. When ready to serve, spoon beans evenly into broiled jalapenos. Top each with 3?4 tsp crema, garnish with a pinch of chili powder and sliced scallions.
Tip: If you’re afraid of the heat from the jalapenos just swap in colorful baby bell peppers!
