The Complete Diabetes Cookbook from America’s Test Kitchen

This comprehensive cookbook contains a wealth of information as well as 400 recipes (400!) “re-engineered” to be healthful for diabetics without sacrificing flavor. The book’s forward by Dariush Mozaffarian, MD., DrPH, is well worth reading before jumping into the recipes, as he discusses the importance of food in our lives for all sorts of reasons, including health. He and registered dietitian Alicia Romano developed the nutritional parameters for the test cooks at America’s Test Kitchen to use when creating the recipes for this book.

The introductory section of The Complete Diabetes Cookbook is one of the best explanations of diabetes and how food relates to it that I’ve ever read (and I’ve done a lot of reading on the subject). It’s informative, but it also gives hope that diabetes can indeed be controlled, and without giving up the enjoyment of food. The sections on meal planning, plate building, and stocking the pantry are particularly useful.

In typical America’s Test Kitchen style, many recipes In The Complete Diabetes Cookbook involve multiple steps but none are too difficult for a home cook, and the helpful sidebars explain and/or illustrate anything potentially confusing. Likewise, the “Why This Recipe Works” recipe introductions help make sense of the process or ingredients, and the “Notes from the Test Kitchen” segments provide information and details that will carry you far beyond the recipes to developing the knowledge and techniques needed to be confident in the kitchen.

Each recipe has a complete per-serving breakdown of nutritional information, essential for diabetics who monitor their intake of carbs, protein, fats, fiber, etc. In addition, the many recipe variations also include complete nutritional information to keep you on track.

The recipes in The Complete Diabetes Cookbook are designed to be diabetes-friendly but with universal appeal. Although no one in my household has diabetes, many of these recipes will be appearing on our table.
