This delicious Jam Tart is simple to put together and makes a beautiful presentation. Because it requires only a few ingredients, each one must be of the best possible quality. Use your favorite jam; I’ve found that peach or apricot complement the almond flavor particularly well.
Jam Tart Recipe
1 1/2 sticks softened butter
1/2 cup sugar
1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
1/4 teaspoon Nielsen-Massey Pure Almond Extract
1/4 teaspoon salt
1 1/2 cups flour
1/3 to 1/2 cup jam
1/3 cup slivered or sliced almonds
Cream together the butter and sugar using an electric mixer (preferably a stand mixer) at medium speed until light and fluffy, then add the vanilla and almond extracts and the salt, mixing until smooth. At low speed, slowly mix in the flour, just until combined (it’s okay if the dough is crumbly).
Wrap about 1/2 cup of the dough with plastic wrap, then press it into a thin disk and put it in the freezer. With lightly floured fingertips, press the remaining dough over the bottom of a 10” tart pan or springform pan. Spread a thin, even layer of the jam over the dough, leaving a border of about 1 inch. Remove the reserved dough from the freezer and crumble it over the jam, then sprinkle the almonds on top.
Bake in a preheated 350°F oven for 45-50 minutes, until the tart is golden brown. Cool completely on a rack before removing the sides from the pan for serving. (Recipe adapted from Bake or Break and Chow.)
