Italian Spaghetti Cold Pasta Salad with Bacon

How many of you enjoy a good homemade pasta salad? I know we do! Two to three times a month I will make a cold pasta salad and I’m always experimenting with new recipes. Even though a cold pasta salad is traditionally served during the warmer months, this one would be great to serve at family get-togethers all year long. You can adjust these ingredients to suit your own taste buds.

Italian Spaghetti Cold Pasta Salad with Bacon Recipe

1 box spaghetti noodles, cooked and drained
3/4 of a bottle Italian salad dressing
2-4 Tbsp. Parmesan cheese
salt and ground black pepper (to taste)
1/4 to 1/2 tsp. celery seed
3 Tbsp. onions, finely diced
4 slices bacon, cooked and crumbled
1 tsp. bacon drippings
12 cherry tomatoes, sliced in half
(or) 1 large tomato, diced
1/4 to 3/4 cup Italian cheese, shredded

Cook and drain water from spaghetti noodles. Place them in a bowl and set aside.

In a medium sized mixing bowl combine together the Italian salad dressing, Parmesan cheese, salt & ground black pepper, celery seed, diced onions, crumbled bacon and bacon drippings until combined.

Pour dressing mixture into the spaghetti noodles, stirring until ingredients are combined. Gently stir in the tomatoes. You can stir in the Italian cheese to distribute it through the pasta salad or just sprinkle it on top.

Cover the bowl and refrigerate for 3 or more hours to allow the flavors to infuse.
