September means back to school, the end of summer, and the establishing of new routines. This month, Limoneira spokesperson Megan Roosevelt is making the kitchen a less stressful place with healthy, delicious salads that can be made in advance for the whole family – and that pair beautifully with a simple lemon salad dressing. She brings this and other recipes for great fall tips and treats to the Limoneira YouTube channel all month long.

Quinoa Chickpea Salad with Lemon Dressing Recipe
2 cups baby arugula
2 tbsp pine nuts
1 cup cooked quinoa
1 cup cooked chickpea
Layer ingredients in a mason jar or in a bowl. Top with your favorite salad dressing or with the lemon dressing below.
Lemon Dressing
3 tbsp Limoneira lemon juice
1/2 cup olive oil
1/4tsp sea salt
2 tbsp tahini
Add all ingredients to a small jar and whisk until smooth. Serve as a dressing with your favorite salad.

I love the dressing in this recipe. I think it would make the salad delicious and could be used on other foods too.
I would probably really enjoy this. I really like chickpeas and they are so good for you. I admit I dont use quinoa as much as I could. I am trying to get everyone to like it and it has been an adjustment.
I really like chickpeas and quinoa, but I’ve never put them together. It does sound good. I’ve never tried lemon dressing, either, but I love lemon.
I am a Chickpea Lover! Anything with Chickpeas and I am all about it. I have never thought of combining chickpeas and quinoa, this is an interesting combination.
