Need to make a cake but don’t have a boxed mix sitting on your shelf? Just prefer making your cakes from scratch? If you answered YES to either of those questions, I think you’re going to enjoy this recipe.
It’s a recipe to make a basic homemade yellow cake. I call it “basic” because you can add-in additional ingredients to turn it into a fancy dessert cake if that’s what need. You probably have all of the ingredients on hand.
Homemade Classic Yellow Cake Recipe
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter, softened
1 1/3 cups granulated sugar
3 medium eggs
1 teaspoon vanilla extract
1 1/4 cups milk
Preheat oven to 350 degrees F. Lightly grease a rectangular baking dish or two round cake pans.
In a large mixing bowl beat together the softened butter with the granulated sugar. Beat in the medium eggs and vanilla extract until mixture is creamy.
In a separate bowl sift together the all-purpose flour, baking powder and salt until combined. Alternately add the flour mixture and the milk into the first bowl, beating in between each addition until well combined.
Pour cake batter into your prepared baking dish. Place in a preheated 350 degree F oven and bake for 40 to 50 minutes, depending on the type of pan that you used. The cake is done when the center is firm. Remove from oven and let cool on a wire rack.
Once the cake is cool you can frost it with whatever flavor that you prefer. I sometimes frost mine with a homemade chocolate frosting or with a homemade creamy peanut butter frosting. Delicious!

I just wonder if there is too much baking powder in the recipe, but you say that you use it a lot, so I guess it is OK. My recipe has less baking powder and less sugar.
In our house we love yellow cake and chocolate frosting; there really isn’t any better combination. A moist yellow cake is always best in my mind and homemade from scratch is always best.
These basic recipes sure stand the test of time. Its one of my favorites because it always turns out well and can be easily varied.
This is the recipe I have used for ages. I do not make cakes as much these days, but his one os so easy it is a ‘stand by’ I think these work great too for good old fashioned poke cakes. Your idea of peanut butter frosting is terrific.
