Brussels Sprouts and Orzo Slaw Recipe

How many of you enjoy eating your Brussels Sprouts? I do! I’m particularly fond a Brussels Sprouts that have been steamed (super soft) and then smothered in a creamy cheese & butter sauce.

Everyone will eat their Brussels sprouts in this fresh dish! Thinly slicing or shaving them adds great texture to the salad and using a food processor to slice them will make preparing this salad quick and easy. The recipe is courtesy of Pasta Fits and will make approximately 4 servings.

Brussels Sprouts and Orzo Slaw Recipe

Brussels Sprouts and Orzo Slaw Recipe

4 oz. orzo
1/2 lb. Brussels sprouts, thinly sliced
1 small shallot, thinly sliced
1/4 cup/1 oz. dried cranberries
1/4 cup/1 oz. toasted chopped walnuts

Yogurt-Dijon Dressing:
1/4 cup/2 oz. low-fat yogurt
2 tbsp. extra-virgin olive oil
2 tsp. Dijon mustard
1 tsp. apple cider vinegar
1 tsp. honey
1/4 tsp. each salt and pepper
1 tbsp. chopped fresh chives

Cook orzo according to package directions. Drain and set aside.

Yogurt-Dijon Dressing: Meanwhile, whisk together yogurt, oil, mustard, vinegar, honey, salt and pepper. Stir in chives.

In large bowl, toss together pasta, Brussels sprouts, shallot and dressing. Stir in cranberries and walnuts.

    We usually have brussel sprouts steamed. I dont think I have ever had them in the raw form. I bet they would be good though. This salad looks nice and light and something different. I might try it when brussel sprouts go on sale.

    Interesting ingredients in this dish. I like brussel sprouts baked in the oven.

    I am a big fan of Brussel Sprouts and prepare them roasted or steamed. This recipe looks delicious with them sliced thin in a salad. Dressing looks good too.

    I have a nephew who is the only kid I know who loves Brussels Sprouts, lol. This might get him to eat slaw.

    This sounds and looks like a refreshing salad. I can imagine this light cole slaw/salad at a picnic on the beach or even at a bridal shower. When I read the recipe I actually thought how delicious this would be with a couple of pieces of crisp bacon tossed in.
