Grilled Flatbread Sandwich with Veggies and Meat
During the hot summertime months we try to utilize our barbecue grill as much as possible. Not only does using the grill make for quick meals, but it gives me a good excuse to not fire up the oven & heat up our kitchen. In other words, I keep my electricity bill down!
We like to make super-quick and easy Grilled Flatbread Sandwiches. I will pick fresh veggies from our garden, use whatever meat we have on hand and whip up grilled sandwiches for the family to enjoy.
One of our favorites utilizes red bell peppers, green bell peppers, diced onions, grilled & sliced sausage links, bacon, sliced & diced tomatoes, sliced mushrooms and shredded cheese. We like to toss on some minced garlic and Italian blended herbs too!
My husband will slice, dice and chop all of the veggies and place them into a grill pan with some Italian herbs and a tad of olive oil. Grill them until their fork tender. He then places the flatbread directly on the grill rack to toast them. After he flips over the flat bread, he’ll spoon on the grilled veggies and sprinkle on the shredded cheese. Let them on the grill for another 2-3 minutes and their done!
What’s really nice about these grilled flatbread sandwiches is that you can use whatever veggies you have on-hand or that are in-season in your local area. If you have leftover chicken, sausage, hamburger, pork, fish and/or bacon from the night before…mix that in with your veggies to use it up. A quick and easy lunch or dinner!
