Grilled Cauliflower Pasta with Lemon-Tahini Dressing Recipe

How many of you enjoy eating cauliflower? I admit, I do. I’m very fond of a homemade cauliflower soup especially during this time of the year. For those of you who enjoy it, I think you’re going to appreciate our guest-post recipe today from Pasta Fits. The recipe will make approximately 6-servings. It’s the perfect appetizer or make it for lunch. The cauliflower adds a satisfying meaty texture to the dish and lightly charring it on the grill adds a wonderful smoky flavor, too. If desired, you can add chopped cucumbers and olives to the salad.

Grilled Cauliflower Pasta with Lemon-Tahini Dressing Recipe

Grilled Cauliflower Pasta with Lemon-Tahini Dressing Recipe

4 oz. medium shells
6 cups/1.5 lb. cauliflower florets
2 tbsp. extra-virgin olive oil
1 tsp. dried thyme
1/2 tsp. smoked sweet paprika
1/4 tsp each salt, pepper and garlic powder
1 cup/6 oz. chopped tomatoes
1/3 cup/1.5 oz. chopped red onion
1/3 cup finely chopped fresh parsley
Lemon wedges

Lemon-Tahini Dressing:
2 tbsp./1 oz. tahini paste
1/4 cup lemon juice
2 tbsp. water
1 clove garlic, minced
1/4 tsp. ground cumin
Pinch each salt, pepper and cayenne pepper

Cook pasta according to package directions. Drain and set aside.

Meanwhile, preheat grill to medium-high heat; grease grate well. Toss together cauliflower, oil, thyme, smoked paprika, salt, pepper and garlic powder. Grill, turning occasionally, for 8 to 12 minutes or until tender and lightly charred.

Lemon-Tahini Dressing: Stir tahini paste, gradually adding lemon juice and water until smooth. Stir in garlic, cumin, salt, pepper and cayenne.

In large bowl, combine pasta and cauliflower; toss with dressing. Stir in tomatoes, onion and parsley. Serve with lemon wedges.

    I do enjoy cauliflower. This is a recipe I shall have to make. I would probably add olives and would not use cumin.

    Adding those spices to the cauliflower and then grilling it would make it so flavorful. I would add the cucumbers.

    I love cauliflower so much and haven’t had it in awhile. I have to try this recipe it sounds perfect for summer time. I just got back from the grocery store and got all the fixings for a huge pasta salad. It was 105 degrees here yesterday and not much cooler today so we are eating light.

    Ha! At first I thought the pasta was made of cauliflower! I have wo heads of it in the fridge right now, we eat quite a bit of it. I really hadnt thought of grilling it, hubby likes his overdone (yes I know, but he does so we live with it) I imagine if I have cook it then do the grilling this would work out well. It sounds like a nice lunch or even light supper.

    That looks so tasty! I love cauliflower.
    One of my favorite ways to make it is to boil it with pasta, sprinkle with green onions sauteed in olive oil and topped with toasted bread crumbs.
