Chocolate Shortbread Cookies Recipe
How many of you enjoy making homemade cookies? I know I do! My daughter (Shelly) and I get together about twice a month to bake together and homemade cookies are often on our to-do list.

The recipe below makes approximately 2 dozen cookies.
AMERICAN HERITAGE® Chocolate Shortbread Cookies Recipe
1 cup (2 sticks) unsalted butter, room temperature
1 cup confectioners’ sugar
1/2 cup AMERICAN HERITAGE® Chocolate Drink Mix
1/2 teaspoon coarse salt
1 teaspoon pure vanilla extract
1 1/2 cups all purpose flour
Using an electric mixer, cream together butter, confectioners’ sugar, AMERICAN HERITAGE® Chocolate Drink Mix, salt, and vanilla on medium until light and fluffy, about 2 minutes.
Add flour and mix on low speed until just combined. Gather dough into a ball and flatten into a disc. Wrap in plastic and refrigerate until firm, at least 1 hour or overnight.
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
Roll out chilled dough on lightly floured work surface to 1/4 inch thick. Cut desired shapes with cookie cutters and transfer to prepared pans. Freeze cookies until firm to touch, about 15 minutes.
Bake until cookies are fragrant and centers are firm to the touch, about 18 minutes. Cool on sheet pans 5 minutes, then transfer to wire racks to cool completely.
Store in an airtight container for up to 3 days.
