Chocolate Layer Cake Recipe with Vanilla Buttercream Frosting

AHC Chocolate Cake Recipe

2/3 cup AMERICAN HERITAGE® Chocolate Drink Mix
2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1/8 teaspoon ground ginger
2 cups buttermilk or whole milk
1 cup sugar
6 tablespoons butter
1 teaspoon vanilla
2 eggs

Preheat the oven to 350F. Grease two 9” cake pans, set aside.

Combine the flour, baking powder, baking soda, salt and ginger in a large mixing bowl and set aside.

In a saucepan bring the buttermilk, sugar and butter to a simmer. Cook until the sugar and butter both dissolve. Remove from the heat, stir in the chocolate and mix until it dissolves.

Pour the chocolate mixture into the dry ingredients, stirring until incorporated. Stir in the eggs and vanilla.

Pour batter into prepared cake pans filling them about 2/3 full. Bake until the center is firm and cake tester insert come out clean, about 16 minutes. Let cool.

Vanilla Buttercream Frosting Recipe

Vanilla Buttercream Frosting Recipe
Makes 2 cups of frosting.

4 tablespoons butter, softened
2 cups confectioners’ sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

In a small bowl, beat butter until creamy. Beat in the confectioners’ sugar, vanilla extract, and milk. Use frosting to on your favorite cake, cookies or cupcakes.

    These cakes are very pretty, but I would have also liked to have seen a photo of the cake being described in the recipe. I have never tried to bake a cake with a powdered drink mix, but I think it is a clever idea.

    Thats different using the drink mix but it does makes sense. I unfortunately rarely bake cakes anymore. Now and again I will but I cheat. I havent made a ‘from scratch’ cake in eons even though they taste so much better. Love that butter cream icing!

    Beautiful cakes. This recipe sounds delicious! I have never heard of AMERICAN HERITAGE® Chocolate Drink Mix but using that in a cake mix is pretty clever!
