How many of you enjoy pickled veggies? I enjoy them, but admit that I rarely make them. I guess part of that is because I always thought it would be difficult and/or time consuming. If you enjoy these type’s of vegetables, I think you’ll appreciate our guest post recipe today that’s courtesy of The Cocoa Exchange. You’ll ONLY need 5 ingredients to make it.
Pickled Sweet Peppers Recipe
2 Tbsp. olive oil
1 small onion, thinly sliced
1 bag mini sweet peppers, rinsed
1 cup apple cider or champagne vinegar
1/2 cup Pod & Bean™ White Chocolate Lemon Peppercorn Vinaigrette
In a large saucepan, add olive oil and heat to medium-high. Add onions and gently sauté for five minutes. Add peppers and cook for an additional five minutes. Add vinegar and Pod & Bean™ White Chocolate Lemon Peppercorn Vinaigrette and bring to a slow boil. Simmer and stir occasionally. Cook for 10-15 minutes or until peppers are tender.
Transfer peppers and liquid to an airtight container, cover and store overnight.

I grow these in the arden and enjoy hem so many ways. I havent pickled any in quite some time. These are so good on sandwiches. OK, I admit I can easily eat them right out of the jar! I am going to have to find this Pod and Bean spice you mention. I have never heard of white chocolate anything like it.
