For those of us who love those type’s of foods there is a healthier way to prepare and enjoy them. Two months ago my daughter gave me her old air fryer and I’ve been using it ever since. The more I use it, the more comfortable I get in using it to prepare my meals. Plus, the cookbook that I’m featuring on the blog today has some of the BEST air fryer recipes around.

Last week I had both of my great-grandchildren over for the weekend. They enjoy eating a lot of potato tots. In the cookbook on page 57 is a recipe called Bacon-Wrapped Potato Tots and we prepared that. You only need 2 ingredients (bacon and frozen potato tots) to make it and within 25 minutes…lunch (or snack) was on the table. The kids loved them and I admit, I loved them too.
I’m going to pick up some skinless salmon fillets from the seafood & fish market next weekend so that I can try out the Brown Sugar & Butter Glazed Salmon Recipe on page 179. You only need 5 ingredients to make it and dinner is done in less than 10 minutes. Now that’s my type of quick and healthy meal.
