Glazed Lemon-Cranberry Scones Recipe

Readers of The Classy Chics well know of Shelly’s talent for baking, as well as the good use she makes of Nielsen-Massey products; for example, just look at her Lemon and Berry Waffles and Mom’s Chewy Chocolate Chip Cookies. Today, I’m the lucky one to share a recipe, Glazed Lemon-Cranberry Scones, featuring Nielsen-Massey Pure Lemon Extract!

When I’m putting time and effort into cooking or baking, I want to make sure the results are my best, and high-quality ingredients are crucial to making that happen. Nielsen-Massey extracts and flavorings are top-of-the-line, and using them is one way to ensure raves at the table.

Nielsen-Massey Pure Lemon Extract

Their all-natural Pure Lemon Extract gives my scones a wonderful lemon scent and flavor, and I don’t have to zest or juice any lemons. A mere teaspoon of extract is the equivalent of two tablespoons of juice or one teaspoon of zest, making it an economical alternative to expensive fresh lemons. It’s perfect in baked goods, but it also works well in savory dishes, salad dressings, beverages, and many other instances where you want a touch of lemon.

Scones are my favorite breakfast goodie, and I make them often. Thanks to Nielsen-Massey Pure Lemon Extract, these scones come together quickly, and they disappear fast, too!

Glazed Lemon-Cranberry Scones Recipe

Glazed Lemon-Cranberry Scones
Makes 10 scones

Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold unsalted butter
1/2 cup whole milk
1 egg
1 teaspoon Nielsen-Massey Pure Lemon Extract
1/3 cup sweetened dried cranberries, plumped

Glaze:
2/3 cup sifted powdered sugar
1 teaspoon Nielsen-Massey Pure Lemon Extract
2 tablespoons whole milk

In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Using a pastry blender or your hands, cut in the butter until the bits of butter are pea-sized. Set aside.

Combine the milk, egg, and Nielsen-Massey Pure Lemon Extract. Pour the liquid ingredients into the flour mixture and stir with a fork just until the dry ingredients are moistened and a shaggy dough starts to form; don’t over mix the dough, or your scones will be tough. Stir in the dried cranberries.

Preheat the oven to 400°F.

Turn the dough out onto a lightly floured surface and gently work it with your hands until it comes together.

Knead it three or four times, folding it over onto itself. Pat or roll the dough to a half-inch thickness. Cut out rounds using a 2 1/2” biscuit cutter, pushing the cutter straight down without twisting. Place the scones on a baking sheet lined with a silicone baking mat or parchment.

Bake the scones for 15-20 minutes, or until the tops are lightly browned. Cool them on a wire rack.

Combine all three glaze ingredients in a small bowl; add more powdered sugar or milk if needed to adjust the thickness. Brush the glaze over the cooled scones.

Notes:
* Plumping dried fruit improves its texture. Cover the dried fruit with water and microwave it on high for one minute. Let it steep for a few minutes, then drain it and spread it out on a paper towel to absorb any excess water.
* Substitute your favorite dried fruit for the dried cranberries.
* Rather than cutting the dough into rounds, shape it into a circle or rectangle and slice it into wedges or squares.
