Kansas City BBQ Bacon Shrimp Recipe

January 14, 2018 by Jenelle

How many of you enjoy eating seafood? More specifically, shrimp? Our family eats a lot of fish and seafood and it’s on our dinner menu at least once every week. I’m a big lover of crab and shrimp, while my husband enjoys oysters and saltwater fish. What kind of seafood do you enjoy eating and how often do you enjoy it?

Today’s guest-post recipe is courtesy of The Cocoa Exchange. You can visit their website to learn more about them and to get additional recipes.

Kansas City BBQ Bacon Shrimp Recipe

1 lb. uncooked shrimp (21 to 25 count), peeled and deveined
12 slices bacon, thin cut
1 cup POD & BEAN™ Kansas City BBQ Sauce
Salt and pepper, to taste

Preheat oven to 400° F.

Arrange the bacon on a sheet tray and bake in preheated oven for 5 minutes. Remove from oven and turn the oven up to 425° F.

Remove bacon from sheet tray and cut each slice in half. Spray the roasting pan liberally with nonstick cooking spray.

Take each uncooked shrimp and wrap it in a bacon half and sprinkle with salt and pepper. Wrap the shrimp and place seam side down on the sheet tray. Liberally brush each shrimp with POD & BEAN™ Kansas City BBQ Sauce.

Place tray in oven and cook for fifteen minutes. At the end of the fifteen minutes, increase the oven to BROIL and cook for three additional minutes. Remove and serve immediately.

I love bacon and I love shrimp. I just wonder if the baking/broiling for 18 minutes would overcook the shrimp.

I really like this combination. The bacon would infuse itself into the shrimp plus if you were grilling it wouldnt burn quickly. These would make for some fancy superbowl food, I love it.

This sounds so good. I cannot eat shellfish so I need to substitute something. Maybe I can make it with meatballs. That sounds so good to me. Thank you for the idea.

I’ll take your favorite seafood AND your husband’s. I like all kinds. I had shrimp scampi yesterday.
