Date and Coconut Balls Recipe

My mom spent last weekend at our house and we finally finished up our holiday baking. This holiday season we made over 14 different type’s of cookies, fudge, breads and other delicious goodies! We enjoy giving them away to neighbors, friends and we take a big container of our homemade goodies down to the local senior center for their residents to enjoy.

This year we made a new recipe for these delicious Date and Coconut Balls that mom got from her neighbor. I have to admit, my old recipes that I used to use, wasn’t as easy or as good as this one! You’ll find the easy-to-make recipe below.

Date and Coconut Balls Recipe

Date and Coconut Balls Recipe

2 medium eggs, lightly beaten
1 cup granulated sugar
1 cup chopped dates
1 teaspoon vanilla extract
1 tablespoon butter, softened
3 cups crispy rice cereal
1 cup flaked coconut

Note: You can vary the flaked coconut amount to your own personal liking. I like mine “lightly rolled into the coconut”, but hubby likes his heavily rolled into it.

In a large saucepan over medium heat, stir together the medium eggs, granulated sugar and the chopped dates. Bring this mixture to a boil, stirring constantly for about 5 minutes. Remove pan from heat. Stir in the vanilla extract and butter. Stir in the crispy rice cereal until combined.

Place the flaked coconut in a bowl or on a plate.

Grease up both of your hands with a little bit of butter or margarine. Using your hands, roll the dough mixture into 1 1/2″ to 2″ sized balls. Roll balls into the flaked coconut. Place on a plate and let them sit for about 30 minutes before serving or store them in an airtight container.

    I’ve made something similar, but never incorporated the rice cereal. What a great idea to make it more filling. Plus, I think it makes it more kid-friendly.

    This looks like an easy recipe and should taste delicious too. I am using more dates in my recipes now because my daughter-in-law loves them.

    These to me sound great. I really love dates and there are so few recipes that use them, I generally eat them out of the bag! I like the thought they have coconut too another favorite.Hubby isnt a fan of either so I would just have to share with someone else!

    I will have to try this recipe it sounds so delicious. Easy to do too. My Kind of recipe. Its so wonderful of you and your Mom to bake for your friends and the Seniors at the Senior Center. Its a lot of time and work but I am sure it is so rewarding. God Bless and a Very Happy New Year…

    I wish my Dad was alive. He would love this recipe. What a good idea bringing cookies to the senior citizens. So many of them are forgotten.
