Moroccan Stuffed Peppers Recipe

Several weeks ago my daughter shared her recipe with all of you on how to make stuffed green peppers. For those of you who love stuffed peppers, but are tired of the same old, same old…we got a great recipe to share with you!

Moroccan Stuffed Peppers Recipe

Moroccan Stuffed Peppers Recipe

4-6 bell peppers
1 1/2 lb. ground beef
1 cup tomato juice
1 box Uncle Ben’s Long Grain and Wild Rice (spice packet removed)
1 Tbsp. POD & BEAN™ Sweet & Spicy Cocoa Rub
1/2 cup feta cheese, shredded
1/2 cup onion, diced
2 Tbsp. olives, pitted, diced
2 Tbsp. fresh mint leaves, chopped
1/2 Tbsp. Kosher salt
Tops of peppers, diced
1 cup Pod and Bean™ Moroccan Sauce
1 cup tomato juice

Wash peppers and cut off just enough of the top to fully open the pepper. Remove seeds and the white ribs on the inside of the peppers. Discard the stem and dice the pepper tops.

In a large bowl, add all of the ingredients and mix well.

Scoop filling into peppers, making sure to pack firm and mound it just a little over the top of the pepper. Place peppers in slow cooker on Low heat. Mix 1 cup Pod and Bean™ Moroccan Sauce and 1 cup tomato juice and pour over peppers.

Allow to cook in slow cooker for 6-8 hours.

    This sounds like a marvelous different way to stuff bell peppers. I love the idea of cocoa rub, but would probably switch mozzarella for the feta cheese

    This would certainly be a wonderful stuffed pepper recipe to add to the collection. This looks like it would be so flavorful with the Moroccan sauce and cocoa rub.

    I like how these are a bit different. The peppers are halved rather than the other way . I also have never heard nor seen the cocoa rub. This would be a nice change of pace.

    These sound amazing! I love stuffed pepper and I am always looking for a new way to spice up the old! I am adding these to my grocery list and I am going to try and put these in the dinner rotation!

    I have not heard of Cocoa Rub before. I will have to look into it. This recipe sounds so good.

    This looks marvelous and I will have to buy that Cocoa Rub. Have you noticed more use of tomato juice in recipes these days, to make sauce? I thought it was my secret, but no.
