Easy-to-Make Homemade Buttercream Frosting Recipe
I have a passion for baking…I love to bake and bake homemade goodies for my family several times a week. When I say I love to bake, I love to bake from scratch. While it’s quick & easy to buy store-bought frosting & icing, I avoid it due to the ingredients and preservatives they put into it. In addition, I think anytime you make something from scratch, it just tastes better!
We are not huge cupcake and cake eaters here at my home, but when I do make them…I like to whip up a batch of homemade buttercream frosting for on top. If you’re making a double layer cake, you’ll need to double this recipe. If your making a regular batch of 6-8 cupcakes, you’ll have enough frosting for all of them.
Easy-to-Make Homemade Buttercream Frosting Recipe
16 oz. jar of marshmallow creme
1 1/2 cups (3 sticks) butter, softened
5 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1/2 cup confectioners’ 10X sugar
In a medium sized mixing bowl, beat the marshmallow cream using an electric mixer set on low speed. Add the softened butter in 1″ pieces and beat until smooth and creamy. Add-in the fresh lemon juice, vanilla extract and confectioners’ 10X sugar, scraping down the sides of the bowl to make sure everything gets mixed together. Beat on medium speed with an electric mixer until smooth and fluffy. Frost your cake or cupcakes immediately.
Tip: I spoon all of my frosting into an icing decorator bag and then just squeeze it onto the top of my cupcakes. If you don’t have one, spoon it all into a zipper closure freezer bag and push it down into one corner of the bag, purge out the air and seal. Use scissors to cut the tip off of the bag and use it as a decorating icing bag.
