Delicious Gluten-Free Muffins by Garden Lites

May 2, 2017 by Shelly

Garden LitesHow many of you get the recommended servings of vegetables into your diet every day? I love veggies, but I admit…I don’t eat enough of them! If you’re looking to get more veggies into your daily diet or just looking for healthier alternatives, I think you’re going to appreciate all of the foodie products from Garden Lites, the delicious vegetable company.

The company is proud to honor all of their customers who choose a healthy lifestyle, including those who are gluten-free—whether they suffer from Celiac Disease that impacts over 3 million Americans, or simply choose a wheat free diet for other reasons. Garden Lites aims to satisfy these customers’ needs with an entire range of delicious gluten-free foods. Their products are great for the entire family.

** Complimentary Samples Received for Review & Inclusion.

Garden Lites Vegetable Muffins

Garden Lites muffins, delicious, filling treats in which the first, and main ingredient is always a vegetable! With just the right amount of sweetness and flavor, these muffins are great for breakfast, lunch, dessert or anytime snack. All varieties are gluten-free, vegetarian, dairy free, low in calories and a great source of fiber with 3g of fiber, and 5g of whole grains.

These two ounce muffins are individually wrapped making them great for portability. They can be heated up in the microwave in only 35 seconds or can also be enjoyed at room temperature which is especially great for on-the-go snacking. Best of all, busy parents can pack the muffins in their children’s lunchbox in the morning, and by lunchtime, they will be perfectly room temperature and ready to be enjoyed!

For this foodie feature we received 2 complimentary packages of muffins from Garden Lites.

Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins are made with fresh zucchini. They are gluten-free, 120 calories per serving, 3g fiber with 5g whole grains. The package came with 4 individually wrapped muffins and you keep them stored in the freezer until ready-to-use. Once you’re ready, you can microwave one in the microwave for 35 seconds or thaw one out at room temperature and then enjoy.

When it comes to baked goods, banana is a go-to flavor for me, so when I saw these Banana Chocolate Chip Muffins with Zucchini, I just had to try them. If you’re not a fan of eating zucchini, don’t worry…you barely can taste it at all. In my honest opinion, I tasted the banana and chocolate chips, which was the perfect combination of both! I tried them at room temperature and I heated one up in the microwave and both were equally good, although I enjoyed it more after it was heated.

Carrot Berry Muffins by Garden Lites

Carrot Berry Muffins are made with fresh carrots. They are gluten-free, 120 calories per serving, 3g fiber with 5g whole grains. The package came with 4 individually wrapped muffins that you store in the freezer until ready-to-use.  Once you’re ready, you can microwave one in the microwave for 35 seconds or thaw one out at room temperature and then enjoy.

I admit, I’m not a huge fan of carrots and I won’t eat them raw. When I do eat carrots, they have to be in a baked good for me to consume, like a muffin or sweat bread. I tried this particular flavor at room temperature & heated up in the microwave and for this flavor…I do indeed prefer it heated in the microwave and I drizzled just a tad of melted honey butter on top. While I like this flavor, I definitely preferred the Banana Chocolate Chip Muffins best.

You can find Garden Lites products in various grocery stores nationwide. I typically find them in the “specialty” frozen foods section at my local store.

The homestyle waffles look good to me. I’ve always been one of those picky eaters since a kid but I think they would be good hidden in a muffin.
