My family loves corn and every year during Christmas and Easter my husband makes his Southern Baked Corn Recipe to go along with our holiday ham. Every time he makes this recipe, it quickly disappears.
Southern Baked Corn Recipe
1 – 15 oz. can whole kernel corn
1 – 15 oz. can cream-style corn
1/2 cup low-fat sour cream
1 cup butter, melted
2 large eggs
12 oz. box corn muffin mix
Preheat oven to 350 degrees F.
In a large mixing bowl, mix together both cans of corn, the sour cream, melted butter, large eggs and the corn muffin mix until blended.
Pour batter into a 9″ by 13″ glass baking dish. Bake in a preheated oven for 25 to 30 minutes or until done. The center will spring back, when it’s done. Remove from oven and let it sit in the baking dish for 4-5 minutes and then slice into squares. Best served warm.

That looks great. I love corn, so I would definitely eat this. I think my nephews would like it too since they like that Jiffy type cornbread/corn muffin mix. (I keep telling them real cornbread doesn’t taste like cake, lol, but they love it.)

My mom would make us kids either canned corn, creamed corn, or a box of Jiffy corn bread, but never all together like that. She worked and always managed to get dinner ready at the end of the day. This recipe doesn’t take long though and is a twist on traditional corn bread.
You made me hungry just looking at the picture. This stuff really is super good! There is a version of it made in our part of the country too and I just love it. Thee corn adds a wonderful texture. It isnt too good for the waistline but boy it is good
