Old-Fashioned Blueberry Cobbler Recipe
A few weeks ago I had some friends over to our home for a little dinner party and one of the desserts that I made was a homemade blueberry cobbler. We love fruit cobblers and you can serve them all kinds of different ways. I like mine served with a scoop of vanilla bean ice cream on top, my friend Renee likes it served with a big spoonful of frozen whipped topping and my husband enjoys it in a bowl with some fresh milk.
Cobblers are super easy to make and I typically have all of the ingredients on hand. Here’s the recipe that I used.
Old-Fashioned Blueberry Cobbler Recipe
5 1/2 cups frozen blueberries, partially thawed
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 teaspoon baking powder
2 large eggs, beaten lightly
1/3 cup butter, melted
3 tbsp. milk
Preheat oven to 350 degrees F.
Place the thawed blueberries into the bottom of a 9″ by 13″ glass baking dish. In a large mixing bowl sift together the all purpose flour, granulated sugar and baking powder. Mix in the 2 large eggs until all ingredients are well combined. Spread this mixture over the top of the blueberries. Melt the butter in the microwave for 15 seconds. Pour melted butter over the top.
Place baking dish into the oven and bake uncovered for 25 to 30 minutes or until done. Remove and let cool. You can serve it warm or cool. Refrigerate any leftovers in a sealed container.
