Gluten-Free Baking Mixes from Simple Mills
For 5 years I suffered with terrible GI problems after I would ingest particular foods. I learned over the years what to avoid and what I could eat. After eating a very limited diet, I was finally properly diagnosed with a gluten tolerance problem. This new diagnosis meant that I would have to consume gluten-free foods if I wanted to avoid the GI issues.
Simple Mills makes a line of gluten-free baking mixes that are lower in sugar (compared to competitors) and made with nutrient-rich ingredients like almond flour and coconut sugar. In addition to baking mixes, the company offers gluten-free crackers & frosting’s too.
For this foodie feature I received two complimentary boxes of baking mixes from Simple Mills. Shelly and I get together every week and bake together, I knew that this would be the perfect time to whip them up and taste-test them together.
The first baking mix that we made was the Simple Mills Banana Muffin & Bread Almond Flour Mix which is naturally gluten-free. What’s really surprising is that their baking mix contains 7 hand-picked, whole food ingredients. To the boxed mix, you’ll add your own eggs, water and oil.
I decided to whip up this mix and make a banana bread with it. The preparation time was approximately 4 minutes and the baking time was around 50 minutes. After letting it cool…we got busy taste-testing it. One of the things I liked about it is that you can really taste the banana in it. With some mixes, you can BARELY taste the banana, but with this one, you can taste it. The texture is slightly different than what I’m used to, but different in a really good way. Overall, I would give this mix a 9 out of 10 on a rating scale.
The second baking mix that we made was the Simple Mills Chocolate Chip Cookie Almond Flour Mix which is naturally gluten-free. Like the first mix, it contains 7 hand-picked whole food ingredients. To make the cookies, you’ll add your own milk, vanilla extract and butter or oil. I chose to use real butter when preparing the batter.
The box states that it will make approximately 12 cookies. I was able to get 17 nice sized cookies. The preparation time was about 4 minutes with the baking time (per cookie sheet) was around 8 1/2 minutes. After letting the cookies cool, I noticed they didn’t puff up like a traditional cookie, or at least the way that I expected. They were more flat. While they weren’t puffy, they were definitely delicious! The entire plate of cookies was quickly gone within 2 hours. My great grandchildren, daughter & son-in-law gobbled them right up. I would give this one a 7 1/2 out of 10 on my scale.
I was really impressed with both of these gluten-free baking mixes. Would I buy them? I definitely would and I plan on doing just that! You can learn more about the company & their products by visiting Simple Mills online.
