Chocolate and Mocha Oatmeal No-Bake Cookies
Every week I make a batch of homemade cookies for my family to enjoy throughout the week. While boxed mixes and refrigerated cookie dough is convenient, I always think that making cookies from scratch tastes best and I can control the ingredients. One of my favorite type’s of recipes to make when it comes to cookies are those quick & easy no-bakes…especially during the warmer months of the year when I don’t want to use my oven.
One of my favorite no-bake cookies recipes happens to be those popular chocolate & oatmeal cookies. However, we were starting to get bored with those, so I decided to give them a modern day makeover with a little flavor twist!
I’ve been a HUGE fan of the vanilla extracts and extract flavorings from Nielsen-Massey for many years and I feature the company and their products on the blog often. Nielsen-Massey is my go-to company for purchasing vanilla extracts and flavored extracts…in my honest opinion, the best that money can buy!
Recently I was sent a complimentary bottle of the Pure Coffee Extract to try out for all of you. You can use this coffee extract to make all kinds of different things. You can add it as an ingredient to your favorite dessert, bread, ice cream, etc. type’s of recipes. You can use it to make flavored coffees too! One teaspoon of Pure Coffee Extract is equal to one teaspoon of dry espresso powder or one teaspoon Coffee Extract + 1/4 cup Water = 1/4 cup Brewed Coffee You can find FREE recipes that use the Pure Coffee Extract on Nielsen-Massey’s website.
Here’s my updated no-bake cookies recipe using two of Nielsen-Massey’s extracts. These cookies are super good!
Chocolate and Mocha Oatmeal No-Bake Cookies Recipe
2 cups granulated sugar
½ cup milk
¼ cup dry cocoa powder
½ cup butter or margarine
2½ cups quick cooking oatmeal
½ cup creamy peanut butter
1 teaspoon Nielsen-Massey Vanilla Extract
1 teaspoon Nielsen-Massey Pure Coffee Extract
In a large saucepan combine together the granulated sugar, milk, cocoa powder and butter. Bring mixture up to a boil and boil for one minute, stirring constantly. Turn off the heat. Stir in the quick cooking oatmeal, creamy peanut butter, Nielsen-Massey Vanilla Extract and Nielsen-Massey Pure Coffee Extract. Keep stirring until all ingredients are well-combined and the peanut butter has melted.
Lay down wax paper onto your counter-top or a nonstick silicone baking mat. Drop cookies by the tablespoon onto the paper or nonstick baking mat. Let them cool for one hour and then place them into an airtight container. Will keep for up to one week.
