Cheesy Bacon Topped Potato Wedges Recipe

My family are big potato eaters. Seriously, we eat a LOT of potatoes every week and I’m always looking for new ways to prepare them. We enjoy them baked, mashed, fried, grilled and all sorts of different ways and with different toppings. WE LOVE POTATOES!

One of my family’s favorite potato recipes happens to be these cheesy bacon-topped potato wedges that my husband likes to make. Yes, I make them too, but everyone swears that he makes them better. Sigh. Anyway, here’s the recipe!

Cheesy Bacon Topped Potato Wedges Recipe

Cheesy Bacon Topped Potato Wedges Recipe

4-5 large white potatoes (washed, scrubbed and dried)
3 tablespoons of melted butter
2 teaspoons of salt
2 cups of cheddar cheese, shredded
1/8 cup small green onion, chopped
6 slices of bacon, cooked and crumbled (we like to over-cook the bacon just a tad)

Preheat oven to 375 degrees F. Line a cookie sheet with aluminum foil and then lightly spray with non-stick baking spray. (we use the unflavored baking spray).

Slice cleaned potatoes into 1/4″ thick slices, leaving the potato skins on! Brush both sides of the potato slices with melted butter. Don’t go hog-wild with the butter, each side just needs a little brushing of it. Sprinkle a tad of salt on top.

Place baking sheet into the oven and bake for approximately 30 minutes or until the potatoes are fork-tender and lightly browned. Remove baking sheet, use a spatula to flip potato slices over. Place sheet back into the oven and bake for an additional 12-15 minutes.

Remove baking sheet from the oven. Top each of the potato slices with shredded cheese, chopped green onion and crumbled bacon. Place the  baking sheet back into the oven and bake for an additional 5 minutes. Remove and let stand for 5-8 minutes before serving.

    These sound like a great recipe for potatoes. We love potatoes in all forms too and are always willing to try a new way of preparing them.

    I might do these with sweet potatoes but I’d really like to use zucchini. These are so easy to mix and match toppings to suit everyone’s taste too. I’d like tomato sauce on mine, topped with cheese.

    I have never heard of this recipe before but it has all of my favorite ingredients so I am going to make it and soon. I love it when you share recipes like this one because I think we have all the ingredients in the house at the moment.

    I too like overcooked Bacon that’s the only way I eat it! These potatoes look lip smacking good~ My Family would really enjoy these too! They are also so appealing. I could use them as a side dish at our Family Celebrations. I always appreciate getting a different recipe to serve at Family Gatherings. Lol! Thankyou for sharing! 🙂
