Easy Weeknight Dinner: Italian and Cheese Meatball Sandwiches

Like most people, my week is jam-packed with a work schedule and various family activities. By the time dinner rolls around, I need to whip up a quick, easy and delicious dinner that my entire family will enjoy.

One recipe that my family loves for me to make is the Italian Style Cheesy Meatball Sandwiches. For this particular dish, I use the al fresco Italian Style Frozen Meatballs with fresh basil and mozzarella. These meatballs contain 50% less fat than beef or pork meatballs. They are made out of chicken and are fully cooked. You can reheat them in the microwave oven, regular oven or on the stove-top. Since they’re fully cooked, you can get lunch and/or dinner onto the table pretty quickly. I keep a bag of them in my freezer at all times, because you can use them to make hot sandwiches (like shown above) or heat them up and toss them into your favorite spaghetti sauce for a hearty spaghetti dinner.

Italian Style Cheesy Meatball Sandwiches Recipe

1 pkg. al fresco Italian style frozen meatballs
1/4 cup sliced mushrooms, cooked
2 cups Italian style spaghetti sauce
1/2 cup Italian 3-cheese blend shredded cheese
potato rolls

Note: You’ll want to lightly toast your potato rolls or desired sandwich rolls.

Take the meatballs out of the freezer and reheat them via your preferred method. You do NOT need to thaw them out! While they are reheating, saute some sliced mushrooms in a little bit of butter or oil. Remove from heat.

In a large saucepan combine together the reheated meatballs, cooked sliced mushrooms and the Italian style spaghetti sauce. Heat over medium heat for about 8-10 minutes or everything is heated through and hot.

Spoon the meatballs, mushrooms and sauce onto a potato roll. We can fit 3-4 meatballs per roll. Sprinkle the Italian shredded cheese on top. Serve immediately.

Variation: If I have fresh green bell pepper and onion on-hand, I’ll toss those (chopped up) in with the mushrooms. In addition, hubby will often toss some chopped black olives on top of his sandwich too.

    I love Al Fresco products, especially the apple chicken sausages. I have not yet tried their meatballs, but this recipe looks delicious.

  2. I am a fan of meatball sandwiches. This would count as one of my comfort meals as my mom would make it frequently with homemade meatballs.
