I make a batch of homemade muffins every week. But let’s face it, making the same old, same old recipes can get a little boring. If you’re in a muffin rut, you’ll want to check out this moist muffin recipe that’s packed full with flavor.
Feta and Honey Muffins Recipe
5.30 ounces (or a little less than ¾ cup) feta cheese
3/4 cup powdered sugar
2 1/4 Tbsp. honey
1/2 cup Gaea’s Kalamata D.O.P. Greek Extra Virgin Olive Oil
1 cup all-purpose flour
3.50 ounces (or a little less than ½ cup) ground almonds
1 tsp. baking powder
Gaea Pitted Kalamata olives, cut in half
Brown sugar for garnishing
Preheat oven to 350F. Process the cheese with the sugar and honey in a mixer until smooth. Add olive oil. Combine flour with the ground almonds and baking powder and add to bowl while mixing. Divide batter among 6 greased one-use individual cake molds and top each with half an olive. Sprinkle top of batter with brown sugar and bake for about 25 minutes.

These muffins are completely different from the ones I usually make. They are a combination of sweet and salty and should make a very interesting taste combination
This is definitely a little different, at least I’ve never seen a similar recipe. I do like Mediterranean/Greek food, so I think I would like these.

These are very different! There are ingredients in there I would have never thought to put in a muffin. I would love to try just one of them. I like thee idea of feta and honey but the olives really make it different. I bet these haev a very unique taste!
