Easy Vegan Chickpea Spaghetti Recipe
How many of you are trying to eat healthier this year and get more exercise? For myself personally, those two things are at the top of my list. Now that I’m older, I’m finding it more important than ever to maintain a healthy diet. I love pasta and enjoy it pretty often, but these days I’m branching out and trying some of the new veggie pastas that you see out in the retail marketplace. I’ve never had chickpea spaghetti before, but when this recipe hit the blog’s email box, it really peaked my interest. I love chickpeas in my salad, so why not try it as a healthy pasta option? Right! Here’s the guest recipe from Explore Cuisine. Luckily for me, Shelly makes and can’s her own spaghetti sauce, so I’ll be using her sauce when I whip up this recipe. Easy Vegan Chickpea Spaghetti Recipe
1 box Explore Cuisine Chickpea Spaghetti
1/4 cup nutritional yeast (optional)
1 cup organic pasta sauce
Cook the spaghetti until soft according to the packet directions.
Drain the water from the pasta, and stir in the pasta sauce. Add more if you like more sauce.
Serve in bowls and then sprinkle the nutritional yeast on each one. Season with salt and extra nutritional yeast if desired.
