Did you all know that there is a National Spaghetti Day? I didn’t know that, but every year it’s held on January 4th. I don’t know about all of you, but I enjoy eating spaghetti and I enjoy eating it pretty often.

Black Bean Spaghetti with Heirloom Tomatoes Recipe
1 package Explore Cuisine Black Bean Spaghetti – cooked, drained
2 large heirloom tomatoes– seeded, chopped
2 1/2 T. olive oil, divided
2 garlic cloves minced
5 basil leaves, cut into ribbons
salt and red pepper flakes to taste
Gently combine tomatoes with 1/2 T. olive oil, garlic, basil, and salt, and red pepper flakes. Toss spaghetti with 2 T. olive oil. Top with heirloom tomato mixture and serving immediately.

This looks like a simple, healthy and delicious recipe. I would love to learn to make more vegetable spaghettis. I use a spiralizer to make zucchini spaghetti, but abean spaghetti would be more complicated.
This looks so simple and healthy. What a great idea to do away with some of the carbs by using black bean spaghetti plus it looks delicious. I have used this fresh tomato sauce and it is so flavorful.
I haven’t heard of Explore Cuisine, but I do love black beans & I’d like to try that spaghetti. I’ll look for it.
