Apples are a fruit that you’ll always find in my home. Luckily for us, we can find them all year long around here. We love apples and will snack on them in between meals or chop them up to use in various recipes like pies, muffins, bread, turnovers, cakes and sauces. It’s one of the healthiest of fruits and they are good for your digestive system. My daughter Gia will grab an apple before she will a bag of potato chips.
Carrington Farms sent over this recipe for us to share with you. The recipe will make 12 muffins.
Apple and Flax Seed Muffins Recipe
1 and 1/4 cup Carrington Farms Organic Milled Flax Seed
2 teaspoons baking powder
1 Tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup sugar or sweetener
4 large eggs
1/4 cup oil
1/2 cup liquid (syrup or water)
1 Tablespoon vanilla
1 medium apple, chopped fairly finely
1/2 cup chopped pecans (optional)
Preheat oven to 350 F. Grease a 12-muffin tin or line the muffin pan with paper liners.
Mix the dry ingredients together, then add the rest of them. Let batter stand for 10 minutes, then put into the muffin pan and bake for about 18 minutes or until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin. Let cool for 2-3 minutes before serving.

This looks like a good recipe. The addition of the flax seed makes the muffins healthier for us to eat I need to try to incorporate more flax seed in recipes.
I’ve never tried flax seed but these do look really good. I love muffins–they’re so easy to make!

These look good and pretty dense with flax seeds. I’m used to eating a lot of flax seed daily but for those who are not, they might want to go easy on them since they can really get you movin’! The pecans sound great.
