The holidays are coming and I don’t know about all of you, but schedule from now until after the first of the year is jammed packed! We’ve got errands to run, parties to attend, family gatherings to host, trips to complete and let’s not forget…all of that holiday shopping to do! Yikes!
Today, I’m going to share a super easy recipe with all of you. It’s one of those “cheater type” of recipes, that sure come in handy when you’re super busy and need a tasty holiday treat. Below the recipe, you’ll find some information on the Pure Peppermint Extract from Nielsen-Massey that I used in this recipe. Let’s get started.
Note: Depending on the sizes of the packages you use, you may have to make it in a 9″ by 13″ baking dish or use two 8″ or 10″ square baking dishes.
Chocolate Peppermint Cookie Dough Brownies Recipe
1 Box Brownie Mix
1 Box Chocolate Chip Cookie Mix
1 teaspoon Nielsen-Massey Pure Peppermint Extract
Ingredients to make BOTH the brownie mix & cookie mix
You’ll want to prepare the brownie mix in a large mixing bowl, following the box instructions. Prepare the chocolate chip cookie mix in a separate large mixing bowl, following box instructions.
Measure out 1 teaspoon of the Nielsen-Massey Pure Peppermint Extract and mix it into the chocolate brownie batter, set aside.
Prepare a large square baking dish (mine was 10″ square) with a little bit of non-stick baking spray and preheat the oven to 350 degrees F.
Using a large spoon, alternate adding brownie batter and cookie batter into your baking dish. Do not stir it together, it should just be dropped (spooned) into your prepared pan. Place it into a preheated oven and bake for 13 to 15 minutes or until done. Remove and let cool. Once cool, cut into squares and store in an airtight container.

This was the first time that I’ve tried their peppermint extract and it’s fantastic for holiday baking. It only contains two ingredients: Peppermint Oil and Alcohol. It’s Kosher, gluten-free and certified all-natural. You’ll find it available in 2 oz. and 4 oz. sized bottles.
Not sure how to use it and what to use it in? Well, don’t worry! Nielsen-Massey has recipes on their website that utilize this delicious extract and I’m sure that will spark some foodie ideas. I like peppermint, but I like being in total control of how much peppermint flavor that I give to something. I love having a light peppermint taste that’s mixed with chocolate, hence…the brownies recipe that I’m sharing with all of you today. The extract took the brownies from ordinary to extraordinary!
