Unstuffed Green Pepper Soup Recipe for the Slow Cooker

Unstuffed Green Pepper Soup RecipeHow many of you enjoy eating stuffed green peppers? You know, the green bell peppers that you hollow out and stuff with a rice, hamburger and tomato sauce based filling, and then bake in the oven? Well, if you love those bell peppers stuffed, I think you’ll love this slow cooker recipe to make this delicious soup which is super easy to make!

Slow Cooker Unstuffed Green Pepper Soup Recipe

1 lb. lean ground beef
2 to 3 cups uncooked white rice
1 – 32 oz. jar spaghetti sauce
1-2 cups of water
3 green bell peppers, chopped
1 onion, finely chopped
24-36 cherry tomatoes, sliced in half
1 1/2 tbsp. basil
1 tbsp. parsley
1 1/2 tbsp. oregano
1/2 tsp. red pepper flakes
salt & ground black pepper to taste

Optional: My husband likes his served with shredded cheese on top, so if you like it cheesy, toss on some shredded cheese right before serving it.

Unstuffed Green Pepper and Rice Soup Recipe

In a large skillet, brown the lean ground beef. Drain away grease. Return to heat and stir in the chopped green bell peppers, finely chopped onion and the sliced cherry tomatoes. Reduce heat to low and simmer for 6-7 minutes.

In the slow cooker, combine together your cooked hamburger & veggie mixture with the 32 oz. jar of spaghetti sauce. Stir in the basil, parsley, red pepper flakes and oregano. If you want to add salt & ground black pepper to it, you can do it now or let people add their own when you serve it. Turn the heat up to high and cook for 1 hour on high. While it’s cooking prepare the white rice.

Follow directions on the package to cook your white rice. Once done, drain away the water. Stir the white rice into the mixture that is in the slow cooker and add at least 1 cup of water, more if the mixture is too thick. Cover and reduce the heat to low.

Slow cook the green pepper soup on the low heat setting for about 2 hours. If you’re not ready to sit down and eat, reduce the heat setting to warm until you’re ready to serve it.

This soup is delicious served alongside toasted garlic bread!

    Oh looks so very good. I especially like that this is a slow cooker recipe so can simmer all day. I think this would really make the flavors even better.

    Oh, I think this sounds really good (LOVE stuffed peppers!) And I like that it cooks in the slow-cooker.

    I LOVE stuffed peppers, hubby not so much. I think he just doesnt like he whole peppers. Now this soup sounds delicious. I am thinking hubby will eat this as long as he peppers are diced fine. I could see this in the crockpot soon!

    This is another good recipe. I love the idea of deconstructing stuffed peppers to make a soup. It should taste very good.

    You always have the best recipes and ones that I have never ever heard of before. I love stuffed peppers and I haven’t had them in so long. I know that I would really enjoy this soup.
