Granola Cookie Ice Cream Sandwiches Recipe

How many of you make homemade ice cream? What about homemade frozen desserts and ice cream treats? We make a lot of frozen desserts & treats here, partially because we can control the ingredients going into them and because homemade tastes a lot better than store bought!

Today’s guest post recipe will take you some time to make, but your time will be well-worth it once you taste them! The recipe is courtesy of Viki’s Granola.

Granola Cookie Ice Cream Sandwiches Recipe

¾ cup all-purpose flour
1 teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon unsalted butter, softened
¾ cup packed light brown sugar
1 large egg
¼ cup buttermilk
1 teaspoon pure vanilla extract
1 ½ cups Viki’s Granola (any variety)
1 pint of ice cream for filling

Preheat oven to 350° and line 2 baking sheets with parchment paper. In a medium bowl, whisk the flour, salt and baking soda. In a large bowl, using an electric mixer or stand up mixer; beat the butter and sugar at medium-high speed until fluffy (approx. 1-2 minutes). At medium speed, beat in the egg. Beat in the buttermilk and vanilla until smooth, then beat in the dry ingredients. Fold in the oats.

Using a 2-tablespoon ice cream scoop, place 10 scoops of dough onto each baking sheet, about 2 inches apart. Bake for 13 minutes until the cookies puff up. Rotate the trays half way through baking. Transfer to cooling racks and cool completely.

To assemble use 3 tablespoons of ice cream on the underside of one cookie and top with a second cookie. Wrap each sandwich individually and freeze for 30-40 minutes to harden.

    The recipe doesn’t mention it, but I spy some caramel on the top of the cookie in the picture. I’d totally add that.

    I love the idea of using granola to make a cookie for an ice cream sandwich. I have Viki’s Granola, but usually I want to eat it right away and not use it in any recipe.

    I feel like I have had a long day and I could absolutely go for something like this right this moment. It looks amazingly good with the combination of granola and ice cream.
