Easy Weeknight Dinners with Gourmet Pierogis
Weeknight Dinners. Just those two words stress me out most of the time. Our weekdays are so busy and by the time the dinner hour rolls around, I’m scrambling to put a hot dinner on the table that everyone will enjoy.
Well, I’ve found a solution to that and I’m excited to introduce you to Popkoff’s Pierogis. Now, you may be wondering what the heck is a pierogi? Pierogis are stuffed dumplings from Eastern Europe – just boil them in water for 5 minutes, and they are ready to eat. Plus, you can take them a step further by sauteing them in butter (or oil) with a few of your favorite herbs to jazz them up even more.
With the many different varieties of Popkoff’s—everything from Potato & Onion Vareneki to Pelmeni filled with chicken, it’s easy to treat your family to a quick and delicious meal. The dumplings can be used in many ways – try it’s traditional preparation, or with mushroom sauce, or even cold in salads. They’re perfect for lunch, dinner or as an after-school treat.

My family has always enjoyed eating pierogis, so they were super excited to give this brand a try. On one particular evening we made the Vareniki with Potato & Onions and the Pelmeni with Farmer’s Cheese the traditional way of boiling them. Once they were done, I sauteed them in a skillet with a little bit of butter, oregano, parsley, salt and ground black pepper for about 3 minutes over medium heat. My family enjoys them with a little bit of crunch. I served them alongside a freshly prepared garden salad and the family raved about their meal. As the cook, I was pretty happy that I had a complete dinner on the table in less than 30 minutes!
During another busy weeknight I prepared the Pelmeni with Beef Pierogis by boiling them until they were done. While they were boiling, I popped a jar of my homemade pasta sauce and heated that up. I drained the water from the pierogis and then tossed them into the sauce and left them simmer over low heat for about 8 minutes. Yup, just like making spaghetti. Once everything was done, I served them in the pasta sauce alongside some cheesy tomato garlic bread and the family loved them. This entire meal took me less than 35 minutes to put onto the table.
Next week I’ll be making the Pelmeni with Chicken Pierogis for the family to try out next. One of the things I love about these pierogis is their taste and texture. They are super flavorful and their texture is smooth. In addition, they’re on the smaller size and not those over-sized ones you find in the grocery store. They cook up so much nicer at this size and you don’t have to cut them up for the kids to enjoy. They’re absolutely delicious!
