When I was a child, I grew up eating a lot of Mexican cuisine since I lived half of my life in the great state of Arizona. Since I grew up eating a lot of Spanish food, it’s one of my preferred types of cuisine.

A few months ago my hubby surprised me with a new Hamilton Beach Quesadilla Maker and I’ve been using it several times every week. It’s great for whipping up quick lunches and doesn’t heat up my entire kitchen like using the stove or oven. In other words, it’s perfect for the hot summertime months! Plus, this model/unit heats up quickly and is really easy to clean. I highly recommend it!!!
My backyard garden is yielding all kinds of great veggies for me right now, so last week we whipped up some delicious chicken Quesadillas. Here is the recipe!
Chicken, Tomato, Bell Pepper & Cheese Quesadilla Recipe
Flour Tortillas
1 cup cooked & diced chicken
1 cup chopped tomatoes
1/4 cup chopped bell peppers
3 tbsp. finely chopped onions
1 1/2 cups to 2 cups shredded cheese for tacos
We buy a pre-packaged mix of shredded cheese for tacos at our local grocery store. My quesadilla maker has a non-stick surface, so I don’t spray it with non-stick baking spray.
Heat up your machine according to directions. Once it’s ready, lay down your first flour tortilla. Sprinkle a little bit of cheese, then the chopped chicken, chopped tomato & bell pepper, onion and then additional cheese on top. Place the second flour tortilla on top. Close the machine and grill for approximately 1 1/2 to 2 minutes or until all of the cheese has melted & everything is bubbly hot inside. Remove and let sit for an additional 2 minutes before cutting into wedges & serving.
You can basically fill them with whatever veggies, meat and cheeses that you have on hand. Hubby likes to toss a little bit of minced garlic and black olives inside of his. We serve them right alongside some sour cream and peach & mango salsa for dipping. YUMMY GOOD!

Mmmm. You could make that for me any time. Ha! I use a big frying pan to make quesadillas, and flipping them is always tricky, and sometimes messy when it doesn’t go right. I have an Amazon gift card to use, and now you’ve got me thinking I should look at quesadilla makers.

I like making quesadillas because of how we can all make them to our individual preferences and how easy and fun they are to make. This is one of our go to recipes for after school snacks with just some cheese, olive and tomato the way the kids like them.
I love how versatile quesadillas can be. I also like your husband’s idea of adding olives and garlic and the sides of sour cream and peach/mango salsa for them. I am getting hungry writing this
