I’ve been collecting cookbooks for the past 30 years and have amassed a collection of over 300+ books. Some of them are your specialty cookbooks from famous chefs and others are community books from small town America. One of the best ways you can break out of a cooking and/or baking rut is to invest in a new book & challenge yourself to make at least 25% of the recipes in it.

Today I’m excited to introduce you to a brand new cookbook to my collection.

The Happy Cookbook contains 130 wholefood recipes for health, wellness, and a little extra sparkle. It’s written by Lola Berry, Australia’s favorite nutritionist. Her cooking is fresh, vibrant and jam-packed full of flavor. In this book Lola shares 130 recipes based around nutritionally dense wholefoods, which are gluten-free and wheat-free, with very little dairy and no refined sugar.

I love this new cookbook addition to my kitchen library. It has some great recipes in it along with mouth-watering foodie photography. Each recipe has a list of ingredients, along with full preparation directions. You’ll find some helpful prep & serving tips along the way too.

I know we’re in the middle of summer, but I couldn’t resist. I whipped up her Pumpkin Pie Smoothie recipe and oh my gosh…it was delicious! You only need a handful of ingredients to make it and it whips up super quickly. After I get to the grocery store next weekend, I want to whip up her Coconana-Berry Smoothie recipe. If you love smoothies, you’ll LOVE this section in her cookbook!

    I would make the Spicy Pepita, Kale & Buckwheat Salad. I love Pepitas these days. And kale we look for every way imaginable to make it palatable.
