I absolutely LOVE this new cookbook! Just last week we made the Pumpkin Quesadilla recipe and the entire family loved it! It required ingredients that I already had on hand and made a very tasty lunch!

One of the things I love about this book is that the author includes various tips with most of the recipes. These tips help you along the way when it comes to prep and/or serving time.  Her directions are super easy to follow and there are no “weird” ingredients that you need to go searching the world for. You should be able to buy all of the ingredients locally to you.

We are hoping to try out the Mushroom & Beef Sloppy Joes and the Linguine & Red Pepper Clam Sauce recipes next. Oh my gosh, they look so delicious in the book and I know I can easily follow her recipes!

    This sounds like a wonderful cookbook. I love the idea of having more recipes where the vegetables are the star, especially because I am trying to incorporate more veggies into my diet.

    What a Wonderful Recipe Book! This is a change that I really welcome! Less meat and more Veggies!! By Using these recipes plus trying to buy Organic foods we should be on our way to better Health! I will definitely have to get used to the different types of veggies in these recipes, but it will definitely be worth the try! Thank you for this very informative Review! 🙂
