Mango and Chicken Quesadillas Recipe

July 31, 2016 by Shelly

Mango Chicken Quesadillas RecipeI grew up eating a lot of Mexican food and it happens to be my preferred cuisine. One of the things I love about this type of food is that it’s primarily made with fresh ingredients, incorporates a lot of vegetables and typically, Mexican food is easy to prepare.

If you love quesadillas, they can be made on the stove-top or if you’re like me…invest in a counter-top quesadilla maker which makes preparation a lot easier and quicker!

Today’s recipe is courtesy of the Hispanic cookware brand IMUSA. Please visit their website to learn more about them.

Mango and Chicken Quesadillas Recipe

brown mustard 3 tablespoons
honey 2 tablespoons
Tabasco or hot sauce 3 teaspoons
salt 1 teaspoon
Whole rotisserie chicken 1
mozzarella 1 cup
small red onion 1
bunch cilantro 2.1
ripened mango 1
8-10 inch flour tortillas
non-stick spray
sour cream, optional

Combine first four ingredients in a small bowl and mix with shredded chicken. Heat a large IMUSA sauté pan on medium heat and spray with some non-stick spray. Add flour tortilla and spray top side with more non-stick spray. After a minute, flip the tortilla and evenly spread ½ cup of cheese. Then spread on half of the tortilla some chicken mixture, onions, cilantro, and mango. Fold over tortilla, like a book, and allow cheese to melt completely. Cut into 4 wedges and serve with sour cream, if desired.

How many of you enjoy making and eating a good quesadilla? If so, what is your favorite flavor or combinations to whip up? I’ll have to feature some of my own quesadilla recipes here on the blog in the coming weeks. I love them and probably make them at least once every 2 to 2 1/2 weeks. YUMMY good!

I never thought to put brown mustard with a quesadilla, but this looks so good! I love the use of rotisserie chicken. The best kind of chicken there is!

This is a great recipe for leftover chicken or turkey and I shall try it the next time I use them to make quesadillas. I like the combination of sweet and spicy.

This looks very different and tasty. Mangoes have been plentiful and inexpensive here these last couple of months and this looks like a nice way to use them..

I hadn’t thought of trying mango in quesadillas! It does sound pretty good, though. That’s something I’ll have to try out.

Gosh, that looks great. I adore mangoes in every form, but I had not thought of this!
