Homemade Olive Oil Cake Recipe

Olive Oil Cake RecipeOver the last few years, Mediterranean cuisine has gained popularity for it’s easy-to-follow and extremely healthy dishes. It is fresh, light and tasty, and is known to offer a multitude of health benefits such as reducing the risk of heart disease, certain cancers, diabetes, Parkinson’s and Alzheimer’s diseases. Mediterranean cooking is a simple cuisine, one whose basic tenet is that food should be served as close to its natural state as possible. It is not a cuisine that requires the mastering of complicated sauces or difficult techniques, in fact many Mediterranean cooks tend to roast, fry, grill or boil their foods.

Here’s a recipe highlighting one of the core Mediterranean diet staple ingredients: Greek Olive Oil. Olive oil is used in everyday Mediterranean dishes ranging from Apps to Dinner to Dessert!

Homemade Olive Oil Cake Recipe

3 large eggs
2 cups granulated sugar
12 oz PDO Sitia Greek extra-virgin olive oil,
10 oz milk
2 oz orange liqueur
2 oz fresh orange juice
3 teaspoons lemon zest
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
4 ounces blanched and finely chopped almonds

Preheat oven to 350 degrees F. Butter a 10-inch cake pan.

In a large bowl, whisk together the eggs, sugar, PDO Sitia Greek extra-virgin olive oil, milk, orange liqueur, orange juice, and lemon zest. Sift together flour, baking soda, baking powder, and salt. Mix the dry mixture into the wet mixture. Whisk until well blended. Fold in almonds.

Pour the mixture into the buttered cake pan. Bake for 1 hour. Place on a rack to cool. Run a knife around the edges and place it on a plate. Sprinkle with powdered sugar and serve.

    I have been wanting to try an olive oil cake, This looks like a good recipe and my husband will love it after I cut down on the sugar or use sugar substitute for him.

    I’ve never heard of an olive oil cake before but it looks delicious. We have a birthday coming up in our family that I might have to try this for.

      We love them. They are rich cakes…moist too. They are NOT dry & crumbly like some cake recipes. You can top them with fresh fruit too.

    I’m not familiar with using olive oil in a cake recipe. Recipes usually call for oil in some form so why not olive oil?

    This sounds so lovely with the orange notes. I experimented with olive oil cakes after returning from Europe for awhile. It’s very hard to get the right balance. I’ll try yours.

    I have never had Mediterranean cuisine! But your recipe for the Olive Oil Cake sounds so Moist and Delicious.
    I like the Mediterranean cuisine policy! Food should be serves as close to its Natural state as possible. My Husband has Parkinsons and he is also Diabetic. Thanks to your Post I now will look more closely at Mediterranean cuisine. Thankyou for sharing your awesome cake Recipe..
