We received a complimentary box of the Garden Lites Blueberry Oat Muffins to try out for all of you. These muffins are fully baked and are made with fresh zucchini & carrots. They are found in the frozen section at your grocery store and you can thaw them out at room temperature or pop them in the microwave. Each one is individually wrapped which makes them great for lunch-packing.
Each muffin has approximately 120 calories, 3g fiber and contains 5g of whole grains. I appreciate that they’re low calorie compared to other foods in this category.
My husband didn’t like the muffins at all but…my mother and I loved them! They have the perfect combination of flavors: blueberries, oats, zucchini & carrots. I popped my muffins into the microwave for 10 seconds to warm it up and then added a little bit of honey butter to them. My mother enjoyed them plain at room temperature.
To put them to the “kid” test, I had my 7 year old grand daughter try one of them out. I didn’t tell her that vegetables were in it, just that it was a blueberry muffin. Well, that worked, she thought they were very good & said she would eat them for breakfast or take them in our school lunch box if I buy them. Yay!
