Over the last few years, Mediterranean cuisine has gained popularity for it’s easy-to-follow and extremely healthy dishes. It is fresh, light and tasty, and is known to offer a multitude of health benefits such as reducing the risk of heart disease, certain cancers, diabetes, Parkinson’s and Alzheimer’s diseases. Mediterranean cooking is a simple cuisine, one whose basic tenet is that food should be served as close to its natural state as possible. It is not a cuisine that requires the mastering of complicated sauces or difficult techniques, in fact many Med cooks tend to roast, fry, grill or boil their foods.
In celebration of all-things related to the Mediterranean Diet, here’s a recipe that utilizes Greek Olive Oil which is used in everyday Mediterranean dishes ranging from Apps to Dinner to Dessert!
Basil Shrimp Summer Salad Recipe
12 medium-size or 9 large-size shrimp (3 ounces)
1/4 cup white wine vinegar
1 teaspoon PDO Kalamata Greek extra-virgin olive oil,
1 tablespoon lemon juice
1/8 cup chopped fresh basil or 1 teaspoon dried basil
To make basil marinade: Whisk together white wine vinegar, PDO Kalamata Greek extra-virgin olive oil, lemon juice, and basil. Marinate shrimp in a basil marinade for at least 30 minutes or overnight. Grill shrimp until cooked through. Top 2 cups of romaine lettuce with the shrimp and mix well into greens for added flavor.

When the weather gets very hot a recipe like this one is even more tempting to make. Simple fresh ingredients can make the best dishes for any meal.
We are going to have such a hot weekend here about 90+ and this looks like a nice easy recipe that wont heat up the kitchen. I think I will try it – like the Kalamata olives in it.
I love shrimp & I don’t think I’ve ever tried it in a salad, but I definitely would try this. It would be a great Summertime dinner.

This sounds delicious. We both love shrimp any way we can get them! I like how light it looks but it has a nice amount of protein and it would keep you satisfied.
