Every year my daughter plants a large backyard garden and I’m always amazed at the fruits and veggies that she grows. One thing that I always look forward to during the summer season is some of her fresh fruits and veggies in various salad recipes. We love all kinds of different salads and we are always looking for new recipes to make.
Just last week we were asked to share this recipe with all of you and I just printed it out so that I can make it for our family picnic in 2 weeks when we open up the pool for the season. The recipe is courtesy of Executive Chef at Pritikin Longevity Center + Spa, Anthony Stewart and it will make 10 servings. Not only that…look how easy it is to prepare!!! I would of never thought of making a sweet potato & apple salad! YUMMY!
Sweet Potato and Apple Salad Recipe
5 cups sweet potato, diced and cooked
2 cups apple, diced
1 tablespoon lemon juice
8 ounces fat-free sour cream
½ teaspoon cinnamon
1 tablespoon apple juice concentrate
½ tablespoon vanilla extract
Mix all ingredients well in a bowl. Refrigerate for 30 minutes. Garnish with pineapple leaves and sliced fresh strawberries.

This looks like a delicious salad. I love tying out different ingredients in a salad. I also like that there is no fat in this salad.
Wow–this is completely different from any salad I’ve ever made. I’m marking it to try next fall, when the apples and sweet potatoes are plentiful and fresh. This will be a hit around here, for sure, and I hope it goes over well at your family picnic. Thanks!

Well, I’ll have to pass this on to family. I’ve never been able to bring myself to eat sweet potatoes, lol. But all my family just loves them!
That IS easy to make! How lucky you are, that your daughter has her own garden, for fresh, non-GMO produce! This wonderful for the spring and summer, I can make it with store-bought produce. I would just leave off the pineapple leaves and strawberries, as mom is allergic. I could slice up a peach, though and garnish with that, I bet. Thanks!
Now here is something different and delicious!!!! I’m a huge fan as in H-U-G-E of sweet potato – I’m excited to find this recipe and look forward to trying it!
