How many of you have heard of Limoneira before? I had never heard of this company until recently. Limoneira is based out of Ventura County, California and have been in business since 1893. Their pioneer business owners helped lay the foundation for a thriving California citrus industry.

A few weeks ago I was sent a beautiful gift box with 8 fresh lemons inside. I love lemons and cook with them often. On top of that, I’m a huge fresh lemonade drinker too! I was asked to make a few recipes using the lemons from Limoneira and today, I’m sharing with you the roasted chicken that I made 2 weeks ago. It’s really easy to prepare and tastes delicious!
Roasted Lemon Herb Garlic Chicken Recipe
1 whole roasting chicken
1 small clove garlic, minced
2 fresh lemons
1 tsp. Italian seasoning
1 tsp. parsley
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. salt
1/2 tsp. ground black pepper
2 tbsp. onions, finely chopped or minced
5 tbsp. water
12 small new red potatoes, sliced in half
Preheat oven to 350 degrees F.
In a small bowl combine together the minced garlic, Italian seasoning, parsley, oregano, basil, salt, ground black peppers and the minced onion. Stir to combine.
Slice one whole lemon into thin slices and set aside. Take the second lemon and juice it. Mix lemon juice with 5 tbsp. water, set aside.

Place whole chicken into a roasting pan, breast side up. Rub the spice mixture all over the chicken and pour some of it into the cavity of the chicken. Toss half of your lemon slices into the cavity.
Slice the new red potatoes in half and place the halves around the chicken in the roasting pan. Toss the remaining lemon slices on top and around the potatoes. Pour the lemon juice and water mixture on top of chicken and potatoes.
Cover the roasting pan and place into a preheated oven and bake at 350 degrees for approximately 2 hours. During the last 15-20 minutes of baking time, remove the lid from the roasting pan and place back into the oven until skin is golden brown. Remove and let stand in the pan for 5 minutes before serving.

The lemons look wonderfully fresh and such a yummy looking recipes. I think the first thing I would make though would be some fresh squeezed lemonade. That for me is just the best on a warm day.

I love good lemons and have heard of this company . I have not tried their lemons but have heard good things. I think this chicken recipe sounds terrific! I like the idea of the potatoes already there, its like a full meal in one pot. This would be a great recipe for when you want o set it and forget it and be reminded by the great smell it is waiting!

As much as I love lemons, I very rarely buy them, because they’re just so expensive here–the usual price is about a dollar each, and my food budget just doesn’t stretch that far. When I can get them at a good sale price, though, lemon chicken is one of my favorite things to make with them. Your recipe looks amazing, and I can almost taste those lovely red potatoes!

This is a delicious recipe. I always put lemons inside my chicken, but I need to try this version with lemons around and on the chicken too. This is the first time I have heard of the company Limoneira.
Jo-Ann, if you love potatoes…get those baby red potatoes and season those up with the spice/herb mix and the lemon juice. Then throw a few slices of lemons on top of the baby red potatoes. OMG…those potatoes will be so moist and flavorful. Delicious!
Oh I love this. one of the first things that I ever learned to make was the Italian version of this called ‘pollo al forno con limone’; still a classic of my repertoire a” of these years later.
