Savory Pistachio Chewy Bite Salad Recipe – Serves 4
Salad Ingredients:
1 package Setton Farms Pistachio Chewy Bites (6 pieces)
1 Persian cucumber, cut into rounds
1 carrot
2-3 cups packed baby lettuce or mixed lettuce greens
Dressing Ingredients:
2 tablespoons extra virgin olive oil
3 tablespoons brown rice syrup
2 tablespoons balsamic vinegar
1/2 teaspoon sea salt
1/4 teaspoon finely ground black pepper
Remove all Pistachio Chewy Bites from wrappers. Chop each bar into 6 pieces. Set aside.
Place salad greens in a large bowl with enough room to toss salad greens with dressing. Peel carrot into thin strips using a vegetable peeler. Add cucumber and carrot to salad greens and set aside.
For dressing, whisk olive oil, brown rice syrup, balsamic vinegar, sea salt and pepper until uniform. To assemble salad, toss greens together with dressing. Top with chopped Pistachio Chewy Bites.

I love pistachios both in sweet and savory dishes. They are perfect in salads such as this one. I have never tried brown rice syrup. I would love to try the Setton Farms Pistachio Chewy Bites.
I love the pistachio and berry blend snack. I would have trouble not eating the whole bag and having enough saved to make the salad. What a yummy looking salad.

I have been eating more salads lately and love the salad recipe because it looks so healthy and I like the Pistachio Berry Blend. I will have to make this salad and try out this blend.
I love this salad idea, and would like to make it. I haven’t seen anything from Setton Farms in my area, but I haven’t been looking, and haven’t been to many places. I want to look for it!!
I’d love to try this and also need to get some brown rice syrup. I had some which I won but it didn’t last long since I scarfed it down quickly! I love any kind of nuts and thank the good Lord I am not allergic. They are so good for you and really help keep me satisfied. Cucs have been such a good price lately that I’m really stocked up and need to use them so I’ll include extra in the recipe.
I haven’t seen this in any store around here! I’ll have to look. Now that the warm weather is on the way, it’s time to break out the salads. This is a nice-sounding blend. I always do like some crunch in my salad, and these heart-healthy nuts are a better choice than plain croutons (full of empty carbs).
