Bananas are one of my favorite fruits and I enjoy at least one banana every day. They are high in potassium and are one of those healthy grab-n-go snacks. They can be eaten plain or use them as an ingredient in a recipe. Bananas, they make the world go around!
Now that the weather is heating up, how about a cool treat that is good for you to eat and one that is super kid-friendly? This recipe is courtesy of Viki’s Granola. My daughter Gia loves when I make plain chocolate banana pops for her and here is a new twist to that!
Viki’s Banana Granola Pops Recipe
4 Bananas
3 tablespoons Viki’s Banana Walnut Granola
6 ounces dark chocolate chips or shards
8 Popsicle sticks
Peel, cut bananas in half crosswise and insert Popsicle sticks. Place on a parchment-lined tray, cover with plastic wrap and freeze for about 3 hours.
Place Viki’s Banana Walnut Granola into a shallow dish. Melt chocolate in a double boiler over slightly simmering water, over low heat, constantly stirring. Pour the chocolate into a tall glass. Dip each banana into the chocolate and roll in the granola straightaway. Place on a parchment-lined tray. Serve immediately.
If you’re not going to enjoy them immediately, wrap individually in parchment paper or plastic wrap and place them into the freezer.

Perfect, perfect! We always have so many bananas, my mom needs them daily for the potassium. I was running out of ways to fix them for her, beacuse they are starting to get boring floating in the Rice Krispies. Well, this should perk up her appetite for them! And love the freezing part to save for later!
